Creamy Chicken and Mushroom Sauce with Rice.

For dinner tonight I made Lauran and I creamy chicken and mushroom sauce with brown rice, even though it didn’t come out as I had hope for, but made up for with dessert.

What you’ll need:

Chopping board

Sharp knife

Skillet (or large frying pan)

yogurt, brown rice, frozen peas, mushrooms, chicken stock, chicken fillets, onion, garlic

I gave up grating and resorted to using the cool onion chopper shown above

you can’t really see the garlic, but it’s definitely there

mmmmm so creamy!!

and then the sauce randomly went yellow… (but this didn’t affect the overall meal)

Serving Suggestion:

I served the food as it was, but feel free to add your own extra thing to make it truly yours.

For dessert we indulged in chocolate éclairs, although I did have two!

NB. If you want to make this a vegetarian friendly meal, simply replace the chicken with Quorn, and chicken stock for vegetable stock. Also, I’d highly advise you use CREAM instead of yogurt for a creamy sauce, but the dish still tastes creamy with yogurt.

Dinner was not the same without Lex 😦 and we want her to come home ASAP. Let me know how this recipe works for you.
