I made this for dinner the other night and thought I’d share the recipe with you. This was definitely the most challenging thing I’ve ever made, but I think that’s mostly due to the fact that I had (and still do now) no idea how to peel a butternut squash. I know that sounds kind of dumb, but I did struggle with the peeling. Aside from that though, this recipe is fairly straightforward. Enjoy!
What you’ll need:
Deep dish frying pan
Regular frying pan
NB. For a vegetarian alternative, simply skip the chorizo and chicken stock, and add extra vegetables and vegetable stock.
This was UH-MAZE-ZING! And it really filled me up. So much so, that I even had leftovers :O
