Chorizo and Butternut Squash Risotto.

I made this for dinner the other night and thought I’d share the recipe with you. This was definitely the most challenging thing I’ve ever made, but I think that’s mostly due to the fact that I had (and still do now) no idea how to peel a butternut squash. I know that sounds kind of dumb, but I did struggle with the peeling. Aside from that though, this recipe is fairly straightforward. Enjoy!

What you’ll need:

Equipment:

Sharp knife

Cutting board

Deep dish frying pan

Regular frying pan

Saucepan

Spatula

Serving spoon

Measuring jug

Ingredients:

Chorizo and Butternut Squash Risotto

Chorizo, Arborio Risotto and Butternut Squash. I later added mixed vegetables

Method:

Parboil the butternut squash. Two to three minutes should be enough time

Leave the chorizo to stand while the rest of the ingredients cook

Add some extra veg

Make sure you pour in all of the chorizo juice!

NB. For a vegetarian alternative, simply skip the chorizo and chicken stock, and add extra vegetables and vegetable stock.

This was UH-MAZE-ZING! And it really filled me up. So much so, that I even had leftovers :O
