Dried Apples.

Here’s a recipe that’s super easy, takes barely any time and is perfect for snacking.

What you’ll need:

Equipment:

Cutting board

Sharp knife

Bowl

Oven tray

Foil/Baking paper

Ingredients:

Dried Apples

lemon juice, apples (I used a whole bag but you can use as many as you like), a mug of water

Method:

mix four tablespoons of lemon juice with half a mug of water

place your apple pieces in the lemon juice and water mixture. this stops them from browning

leave to soak for about an hour and wrap with cling fim

wrap your baking tray in baking paper if you have it, or just use foil

turn oven to gas mark 1 and cook for one hour. after an hour, flip the apple pieces over

mmmmmmm, so yummy!

NB. Feel free to leave the peel on if that suits you. you can also cut the apples into any shapes you like.

Chorizo and Butternut Squash Risotto.

I made this for dinner the other night and thought I’d share the recipe with you. This was definitely the most challenging thing I’ve ever made, but I think that’s mostly due to the fact that I had (and still do now) no idea how to peel a butternut squash. I know that sounds kind of dumb, but I did struggle with the peeling. Aside from that though, this recipe is fairly straightforward. Enjoy!

NB. For a vegetarian alternative, simply skip the chorizo and chicken stock, and add extra vegetables and vegetable stock.

This was UH-MAZE-ZING! And it really filled me up. So much so, that I even had leftovers :O

Cheesy Mushroom Rice.

The other night I was starving but had no idea what it was that I wanted to eat for dinner. So I did what any person would do and googled my problem hoping for a solution. As it would happen SheKnows was the first result that popped up, so I clicked on it and followed it through to a quick quiz that helped me decide what to eat. The final answer at the end of the quiz was cheesy Mexican rice with beans, and I think it’s fair to say that that acted as the inspiration for dinner that night and for this blog post. Sadly I didn’t have half the ingredients so I had to make do and improvise with what I had. Here’s what I came up with:

Bacon Risotto.

I made this meal AGES ago, but just never really got round to sharing it with you. Looks like some good has come out of my trip to America, eh? Haha. Anyway, you can whip this up in pretty much no time at all, so it’s great for those nights when you’re starving but don’t feel like making and waiting for a gourmet meal.

As promised, a post that doesn’t contain a trace of fashion (or net-a-porter to be more precise) hahaha. I tried this out on Thursday and to be perfectly honest, it was so damn tasty I could have easily eaten more of it. I couldn’t be prouder of another original recipe and can’t wait to share with you all, so here it is.

NB. You can also use risotto rice instead of normal rice (which I think I might try tomorrow for dinner with my left over sauce), or I’m sure you could switch things up and try the sauce with pasta.
